A tasty, light and calming salad for a quick lunch and immune boost :)

In a pan, lightly sauté Mushrooms, Aubergine and Ginger. Add salt, Garlic powder and Chilli Flakes.
Wash Spinach leaves and add to Salad bowl with chopped Cucumber and Red pepper.
Add cooked Vegetables to the Salad mix.
Sprinkle Sesame seeds on top and enjoy :)
