Roasted Onion & Garlic Hummus.

Hummus is so affordable and versatile. This is a family favourite and is used for all meals including snacks.

 3 cups Chickpeas (Cooked and Drained) - keep 1/2 a cup of the drained water for blending.
 ½ Onion (sliced)
 3 Garlic Cloves sliced.
 1 tbsp Coconut Oil (melted)
 ½ Lemon
 1 tsp Coriander (ground)
 ½ tsp Salt
 2 tbsp Sesame Seeds

Preheat Oven to 180 degrees celsius.

Mix Garlic and Onion into Coconut Oil and add Spices.

Place on an oven try and bake until browned. Leave to cool

Add Chickpeas, Sesame Seeds, Drained water and Roasted Garlic,Onion and spice mix to a blender.

Squeeze in lemon juice using a sieve to catch pips.

Blend until smooth and Enjoy!
