A tasty, light and calming salad for a quick lunch and immune boost 🙂
3 cups Spinach Leaves.
½ Cucumber (Sliced).
½ Red Pepper (Sliced).
2 cups Mushrooms (Sliced).
1 cup Aubergine (Sliced).
1 tbsp Chopped Ginger
1 tsp Garlic Powder OR Fresh Garlic Chopped.
1 Salt
1 tsp Sesame Seeds (Optional).
1 tsp Chilli Flakes (Optional).

In a pan, lightly sauté Mushrooms, Aubergine and Ginger. Add salt, Garlic powder and Chilli Flakes.

Wash Spinach leaves and add to Salad bowl with chopped Cucumber and Red pepper.

Add cooked Vegetables to the Salad mix.

Sprinkle Sesame seeds on top and enjoy 🙂
