Masala Lentil Loaf.

A quick and spicy recipe for Masala lovers 🙂

 2 cups Lentils (cooked until soft)
 1 cup Mushroom (grated)
 ½ cup Red Pepper (chopped)
 ½ cup Onion (chopped)
 ½ cup Carrots (chopped)
 ½ cup Zucchini (grated)
 1 tbsp Masala Spice
 1 tbsp Chilli (fresh/ground)
 1 tsp Salt
 ½ tsp Black Pepper (ground)
 1 tbsp Coconut Oil
 3 Garlic Cloves (Chopped)

Fry Vegetables, Garlic, Lentils and Spices in Coconut Oil for 10 minutes until well mixed.

Pre-heat Oven to 180 degrees celsius.

Line a bread loaf pan with baking paper.

Scoop the mixture into the pan and press to form a tightly packed loaf.

Bake for +/- 40 mins until browned.

Serve with Salad and Beetroot or Mashed potatoes. I enjoy it with some Atchaar 🙂
