Falafel Salad

A light and refreshing salad for when you need a chilled and fresh meal after a stressful or long day.

 2 cups Chickpeas (Cooked until soft).
 ½ cup Coriander (Fresh).
 ½ cup Onion (Finely chopped).
 2 Garlic Cloves (Finely chopped).
 ½ cup Chickpea/Wheat Flour.
 ½ tbsp Baking Powder.
 1 tsp Cumin (Ground).
 1 tsp Salt
 5 Gherkins (sliced)
 ½ cup Red Pepper (sliced/chopped)
 3 cups Fresh Greens (Lettuce/Spinach/Kale)
 1 Avocado (Sliced/mashed)
 1 tbsp Sesame Seeds (optional)
 ½ cup Coconut Oil for Frying

Mix Chickpeas with Fresh Coriander, Onion, Garlic, Cumin, Salt and Pepper and Mash until crumbly.

Add Flour and Baking powder and knead with your hands.

Leave in the fridge for at least an hour.

Form Falafel balls according to your size preference.

Heat Coconut Oil in a pan and fry falafel balls until brown. Drain and leave to cool.

Prepare Salad with Greens, Gherkins, Red Pepper and Avocado.

Add Falafel balls to the Salad and Enjoy. I like to add some balsamic vinegar to the Salad for some contrasting flavour 🙂
